Episode 3 - Maui Overview

Chef Mike Lofaro and student of the culture Kainoa Horcajo start their adventure by taking flight above Maui with Proflyght Hawaii in the time of year that traditionally was great for kite flying. Then they gather native limu and find peaches growing upcountry with Forest and Kim Starr. To round out the experience,  they dive to spear fish and find a he'e that gives Kainoa a bit of a struggle, but they learn a valuable lesson from their friend Cody in how to land it. With a beautiful collection of Maui bounty, Chef Mike creates a full spread with horchata; a peach and Thai basil sauce; and lomi he'e.
